This first one, ohmygosh, so good!! Never expected that I would like it, but I was intrigued when I saw the recipe so I decided to try it. So glad I did! YUM! Recipe is from Peas and Crayons found HERE.
Next up, avocado toast. I had this with some yogurt for supper one night. Mash up some avocado, slap it on some toast, and sprinkle with salt. Easy and delish.
Dark chocolate chips for an afternoon treat!
Green smoothies for the kiddos and I. Basically just threw a bunch of stuff into the blender and ended up with something pretty good! On a side note, my blender sucks for making these so I don't make smoothies as often as I'd like. I have to stop and stir every 5 seconds.
Ok. Cauliflower crust pizza, with leftover bbq chicken. I have been wanting to try this after seeing it all over on Pinterest. Finally had a chance. Tasted good, but it did not stay together for me like everyone claimed that it did. I'm not sure what I did wrong, but I probably won't try it again. Paul wouldn't eat it, and it's too much work just for lunch! :)
There you have it! For my next post I'll try and get some pictures up of the kids, for my family, who probably thinks I'm nuts for taking all these pictures of my food. Ha! :)

These are some seriously good eats! Avocado toast is my fave :) and I've always wanted to try the sweet potatoes from Peas and Crayons!!

DeleteI haven't had much success with cauliflower crust. :( I made a meal similar to the sweet potato with chicken, but I didn't have avocado, which totally makes the meal right?!
ReplyDeleteGlad to know I'm not the only one that the cauli crust didn't work for, I had high hopes that it would be as awesome as Pinterest said it was, lol. Yes! The avocado totally put it over the top! :)
