crisp cucumber salsa

I have a subscription to Simple and Delicious magazine, and every issue it seems like there are tons of recipes I want to try. Usually I end up just cutting them out and adding them to my binder, but when I saw this one, I knew I wanted to make it asap. It was soooo good! Paul even liked it! I made it yesterday and we've already devoured it. I can't wait until I can make it again using my own vegetables and herbs from my garden! YUM!

Crisp Cucumber Salsa
Yield 2-1/2 cups

2 cups finely chopped seeded peeled cucumber
1/2 cup finely chopped seeded tomato
1/4 cup chopped red onion
2 Tbsp minced fresh parsley
1 jalepeno pepper, seeded and chopped
4-1/2 tsp minced fresh cilantro
1 garlic clove, minced or pressed
1/4 c reduced-fat sour cream
1-1/2 tsp lemon juice
1-1/2 tsp lime juice
1/4 tsp ground cumin
1/4 tsp seasoned salt
Tortilla chips

In a small bowl, combine the first seven ingredients. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt. Pour over cucumber mixture and toss gently to coat. Serve immediately with chips.

1/4 cup (w/out chips) equals 16 calories

  1. this is DELISH! I think I will reduce sour cream from 1/4 cup to three tablespoons simply because the sour cream gets watery anyways. I am on weight watchers and for the entire 2 1/2 cups it's only 4 points. Tried it on chips and alone. SO YUMMY!

    1. Or substitute sour cream completely with Greek yogurt, that's what I did!

    2. I just started WW recently - Is the sour cream the only item with points since it appears that all the other vegetable items are 0 points plus?

    3. You'd have to put it all into the recipe builder to know for sure. Even when a recipe is almost exclusively veggies, it usually ends up being about one point. If you use fat free sour cream, it knocks off at least a point. WW is epic :)

    1. yes. there is. tofutti makes one. or you could use a recipe for cashew sour cream.

  6. Great recipe!!! Love the crunchiness of the cucumbers. I was going to make with the sour cream but then I decided against it because of all the fresh ingredients I didn't see the need to add it. Left out the lemon, added it once to a salsa and didn't care for the taste, and I love lemons. I have made this 2 times this week already.l

  9. @ The Webber's .. I think it would be fine in the fridge for awhile! Just after a couple days it would probably get a little watery.

  13. The moment I saw this I jumped up and made it immediately, and it is AMAZING!!! Only variation is I used greek yogurt instead of sour cream. Will be making this over and over.

  17. Looks wonderful.... instead of the reduced sour cream, I am going to use 0% fat Greek Yogurt. That will reduce calories and weight watchers points even more!!!!!

  24. I just made this with Tofutti sour cream last night! It's delicious! And I was too lazy to take the seeds out of the cucumber and tomatoes, but it worked out just fine. :)

  25. I just made this and I was also too lazy to remove the seeds. I don't mind eating seeds :) I also didn't use sour cream. I don't have any chips, but will try mine on crackers. It was a good, spicy, low calorie treat! Thanks!

  27. I added a can of drained and rinsed black beans and an avocado, and it became a delish vegetarian summer meal! Ate it with tortilla triangles crisped in the oven.

  29. this is one of the best salsa recipes i have ever made. with all the cucumbers from my garden, i made 2 batches in one week, gave some to my neighbor who like it so much she made it also. this is going to be a favorite in our house!

  31. I tried it without the sour cream (to save calories), jalepeno, and lime juice (didn't have the last two)-- how many calories do you think that would be for a 1/4 cup?

    I ate it with a grilled chicken breast and a whole wheat pita-it was DELICIOUS and refreshing!

  32. my sister in law makes a version of this there is no sour cream, cummin or jalapeno, but there is avacado, black beans, corn, garbanzo beans and some red wine vinegar it is so delicious, I love the way the cucumber makes the salsa taste so unique and fresh

    1. I used mayo and instead of cilantro (I don't like it) I used a little dill. It turned out great. I make it all the time now. We have it a couple of times a week, just for a snack.

  36. Ole Extreme Wellness Tortilla Wraps are only 1 WW point, per tortilla. Would be a great snack, to cut into smaller pieces and crisp in the oven.
